About 1 1/2 pounds of squash
1 onion, diced
1 cup of shredded cheddar cheese
1 egg, beaten
1/2 cup of cracker crumbs
1/4 cup of cream
2 tablespoons of butter
1 tablespoon of sugar
Dash of ground nutmeg
Salt & pepper to taste
Cook squash, onion and sugar in small amount of salt water. Drain and add cheese, cream, butter, egg, nutmeg, salt & pepper. Mix well. Pour into a 2 quart casserole. Top with with cracker crumbs & paprika. Bake at 350F until mixture bubbles and crumbs are brown about 25 minutes.
