Gooey Butter Cakes

Description:
Very sweet and buttery cake squares
Ingredients:
One package yellow cake mix
1 - egg
8 tbs. (1 stick) - butter, melted
1 - 8 oz. package cream cheese, softened
2 - eggs
1 tsp. - vanilla
8 tbs. (1 stick) - butter, melted
One box (16 oz.) - powdered sugar
Directions:
Preheat oven to 350 F degrees. Combine cake mix, egg (slightly beaten), and 8 tbs. butter, mixing well. Pat into a lightly greased 13 x 9 inch baking pan. Prepare filling: Beat cream cheese until smooth. Add 2 eggs and vanilla. Add butter; beat. Add powdered sugar and mix well. Spread over cake mixture. Bake for 40-50 minutes. You want the center to be a little gooey, so do not overbake. Cool and cut into squares.

Note: You may decrease the butter in both the cake and filling to 6 tbs. instead of 8. Placing the cake in the refrigerator before cutting is helpful and the cake tastes great cold.

Try these variations. (1) For the holidays, add a 15 oz. can of pumpkin to the filling; add cinnamon and nutmeg. (2) Add a 20 oz. can of crushed pineapple (drained well) to the filling. (3) Use a lemon cake mix. Add lemon juice and zest to the filling. (4) Add butterscotch morsels and pecans to the filling (or chocolate chips and pecans). (5) Use a chocolate cake mix. Add 3/4 cup peanut butter and nuts to the filling.
