Easy Mexican Casserole

12 - corn tortillas
8 oz. (2 cups) - sliced Velveeta Cheese or shredded cheddar or Mexican Cheese Mix
1 lb. - ground beef, not cooked, crumbled
1 can - cream of chicken
1/4 c. - minced onion (opt.)
1 can - Ro-Tel, mild
Garlic Salt, pepper, chili powder, cumin
1 can - Ranch or Black Beans
Grease 9x13 casserole dish. Layer: 6 tortillas, meat & onion, seasonings, beans, 1 1/2 c. cheese, 6 tortillas, soup, Ro-Tel, 1/2 c. cheese. Bake at 350F degrees, covered, 45 min., uncovered, 15 more min. Serve with Spanish rice.
