Ingredients:
6 - chicken breasts
Juice from 4 limes
2/3 cup - low sodium soy sauce
2 tsp - olive oil
2 tsp - chili powder
2 tsp - cumin powder
2 tsp - ground coriander
6 - garlic cloves (minced)
2 tsp - honey
1/4 cup - fresh cilantro (chopped)
2/3 cup - white wine
Directions:
In a bowl, mix together all ingredients except wine. Place chicken breast in a pan and pour ingredient mixture over chicken. Cover and marinate for 1 hour or longer (try making this a day ahead and letting it marinate overnight.) Remove and pour white wine over chicken breasts. Broil for 10-12 minutes on each side basting with juices to keep moist. Try not to over cook chicken, it should be served very tender and moist.
