Description:
pineapple cake with icing
Ingredients:
cake ingredients
2 cups - flour
2 cups - sugar
1 cup - walnuts (or pecans)
2 teaspoons - baking soda
1/4 teaspoons - salt
2 - eggs
1 - 20 oz. can of pineapple (juice & all)
2 teaspoons - cooking oil
1 teaspoon - vanilla

icing ingredients
2 cups - powdered sugar
8 oz. - cream cheese
1/4 cup - butter
2 tablespoons - drained pineapple
1 teaspoon - vanilla
Directions:
Cake directions: Beat eggs in large bowl. Add the rest of the ingredients and mix well with a large spoon (do not use an electric mixer because that will make the cake fall). Pour into a greased and floured pan (13x9x2). Bake at 350F for 30-35 minutes or until it tests as done.

Icing directions: May use two (2) tablespoons of drained pineapple. Mix ingredients and beat well. Mix 2/3 cup of chopped walnuts (or pecans).
