Orange Almond Salad

1 - head romaine lettuce, torn or equivalent amt. of mixed greens
4-6 - green onions, sliced
1 can - (11 oz.) mandarin oranges, drained, chilled
1 sm. pkg. - (1/2 c.) sliced almonds
2 T. - sugar
3 T. - water

¼ c. - oil
1 T. - sugar
3 T. - balsamic vinegar
1 T. - parsley
pinch salt, Tabasco
In a small pot, mix almonds, sugar and water. Simmer until water is gone, stirring often. Watch carefully at the end so sugar doesn’t burn. Let cool.

Mix dressing ingredients. (If you refrigerate dressing, warm to room temperature before serving.)

To serve, mix lettuce, onions, and dressing. Sprinkle w/almonds and oranges. Serve immediately.
