Oatmeal Cookies - Basic Design

Oatmeal cookies - basic design - nuff said. Make 'em as healthy as you like.
Ingredients:
1 c. - shortening (I use Crisco, butter flavor)
1 c. - white sugar
1 c. - brown sugar
3 eggs
1 tsp. - salt
1 tsp. - soda
(I add about ½ c. applebutter, too)
1½-2 c. - flour
3 c. - oatmeal (more or less)
1 tsp. - vanilla (I also add cinnamon, nutmeg, etc.)
And to make them "healthy" I add as many nuts
and fruit as I can mix in.
Directions:
Usually a cup or so of walnuts, pecans, cashews, almonds, or whatever, a cup of raisins (those had both dark and golden) and a package of mixed fruit bites. (I use a dollar box from Walgreens that has apple, raisins, apricots, mango and stuff like that in it.)

I don't really measure anything. I get a big scoop of shortening, dump in a melmac cup or two or more of other stuff and go with it. I think the brown sugar and applebutter keep them moist and chewy. I also soak the raisins in water for a few minutes to plump them up a bit while I'm mixing the other stuff. Drain off all the water that didn't soak up.

Mix and bake like any other cookies you make. Bake one pan to see if you need to add any more flour or oatmeal. If it spreads all over the place, you probably need a little more dry stuff and oatmeal blends in better than flour. Flour hangs up in the fruit and nuts and sometimes don't mix in as well as the oatmeal does, but you may not need a thing added. Bake on about 375F till they're as brown as you like them (10-15 minutes, perhaps).

Makes 3-4 dozen cookies.
