lemon cake & glaze
Ingredients:
For cake:
1 pkg. - Lemon Supreme Cake mix
4 - whole eggs
1 pkg. - lemon Jello pudding mix
1/3 cup - cooking oil
1 cup plus 2 tablespoons - water

For glaze:
1 can - frozen concentrated lemon juice, thawed
1 package - powdered sugar
Directions:
Place cake mix and pudding mix in bowl. Add water at low speed, slowly, add eggs and oil. After all ingredients are well mixed, increase speed and mix about 2-3 minutes. Place in 12"x16"x2." Cook at 350F for 35-40 minutes until golden brown.

Glaze for lemon cake

Mix in mixer: 1 can frozen concentrated lemon juice, thawed and 1 pkg. of powdered sugar. Stir until well mixed on slow speed. Punch cake full of small holes with fork, and pour mixture over top of cake. Place under
broiler, watching closely, until sugar mixture begins to bubble, do not let brown, or burn. Two or three minutes. Very moist. Note - if you put in too much lemon juice, as I have done on occasion, it becomes a "wemon" cake!
